Brewing Pure Chinese Tea
Use your pick to remove 3 to 5 grams of tea for every 6 ounces of water. To brew your aged tea, bring your water to a boil and rinse the tea for several seconds to revive its latent flavors.
Begin your first infusion by brewing the leaves for 10 seconds. For your second infusion, brew the leaves for just 5 seconds. Every brew after the second infusion should have an additional 5 seconds of steeping time.
